It’s lunch time! And because I was feeling quite lazy last night (and left my lunch bag in the fridge at work) I didn’t make a lunch. At least I didn’t make a major component. I had some carrots and cucumbers leftover from yesterday that were still in the fridge at work in said lunch bag (shocking that I didn’t eat them, I know!) and threw a Motts Plus Fiber applesauce in my purse this morning. I knew I had a few things in the pantry that I could have for lunch but then I also remembered that I had 3 Lean Cuisines in the freezer at work. Perfection!
So today’s lunch was the Stuffed Rigatoni Lean Cuisine (one of my all time favorites) and all the other stuff mentioned above.
I forced myself to eat the raw veggies first. Because well I just don’t like them. I’m much better at eating veggies when they are cooked. But I got them down and was proud. And then I got to have my pasta. Yum. I love carbs. It’s bad I know, but they are just so yummy! So how do I dive into this bowl of pasta? Much like I used to dive into a bowl of Lucky Charms when I was 6. Except instead of eating all of the ‘gross cereal’ first and saving the marshmallows for the end, I ate out all of the veggies first (because this thing is pretty loaded with them) and saved the pasta for the end! So I may be a grown up in the fact that I own a house, work a 9-5, stress over money, and LUST over appliances (hello pretty blue front loadwasher)… but I’m still a 6 year old kid at heart when it comes to eating my veggies!
